Cauliflower, Dirty South Style

Ingredients:
2 medium head cauliflower
2 Green Bell Peppers2 Gr222
1 tsp. Paprika
1 tsp Chili Powder
1 tsp Cayenne1 tsp1
2 tbsp butter or margarine
½ bunch Parsley, chopped
2 tbsp

Directions:
  1. Break the head into flowerets. In large covered saucepan cook in a small amount of boiling salted water for 5 minutes or just until tender. Drain well.
  2. In sauté pan, transfer cauliflower and bell pepper.  Cook until caramelized in butter.  Add spices, and continue cooking.
  3. When Finished, stir in parsley.

Walnut Artichoke Pesto

Ingredients:
3 garlic cloves
1/3 cup Romano Cheese
1/3 cup freshly grated Parmesan
1 lb. Artichokes, cleaned
5 oz. Walnuts
1/4 to 1/2 cup extra virgin olive oil
1 Lemon, Juiced and Zested
½ bunch of Italian Parsley
Salt and Pepper

Directions:
  1. Put all ingredients, except oil, in a food processor and pulse to fully combine.  Once combined, leave it on and add olive oil until a thick spread is formed.  Adjust seasoning with Salt and Pepper.  You should be able to scoop it with a spoon.
  2. Serve with Paste or over Bread.
